Little V's Sauce

Thought I would post this since we make it often and get many requests. It's the version that has been around for several years and not the "true family recipe" but hey - it tastes good!

Other recipes are somewhere here on this blog - but several years ago.

1/2 cup olive oil
1 garlic clove minced
1 small can tomato paste
1 small can water

Simmer 15 minutes

Add:
2 Cans Crushed Tomatoes (1lb 12 oz each)(usually use Furmanos)
1 Tablespoon Fresh Parsley - minced
2 Tablespoons Fresh Basil - minced
8 oz Motts Applesauce (not natural)

Simmer 45 minutes

Add:
1/3 cup grated Pecorino Romano cheese

Okay - that's the recipe as written. Of course - I modify to taste by:

Adding salt - careful as the cheese gives it salt
Adding at least 2 cloves of garlic - minced
Adding a few Tablespoons of sugar
Much more Basil
More applesauce
Saute Pork Steaks in the oil prior to adding any other ingredients; putting them back in once the crushed tomatoes are added
Add at least 1/2 cup of cheese
I also mill the crushed tomatoes to remove the seeds (prior to cooking)

I usually make three batches at once - why go through the effort time and time again? This always tastes better the next day....

Next will be our favorite meatball recipe.... not Little V's (which is our second favorite)
